1. In medium bowl, combine soy sauce, gingerroot, broth, and garlic. Mix well, then add the chicken breasts. Cover and marinate for 1 to 2 hours in the refrigerator.
2. Heat 12-inch skillet over medium heat, then add chicken and marinade. Cook 5 to 8 minutes on one side, then turn chicken, add carrots and honey, cover and cook an additional 8 to 10 minutes until chicken is thoroughly cooked and sauce is reduced.
Serve with rice.
To freeze and make later: Follow step 1 and then pack into zip-lock bag, label, and freeze. To thaw and cook: Thaw chicken in marinade overnight in refrigerator and follow step 2.
