Zucchini and Tomato Saute



 


2 medium zucchinis, sliced into thin circles
2-3 medium tomatoes, chopped
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
Salt and black pepper
1/2 tbsp basil leaves, dried or 1 tbsp chopped fresh basil
1 tsp oregano leaves, dried
1/4 cup wine, optional
 

HEAT olive oil in medium saucepan. Add onion and garlic and saute until soft, about 2 minutes. Add tomatoes, basil, oregano, salt, pepper and cook for 2 more minutes.

ADD zucchini and cook for 5 minutes. Add wine if using and cook 5 more minutes. Serve hot. Serves 4.
